Chicken Quesadilla Flatbread Melt

I’m so in love with great flavor. I’m also in love with convenience meals. So microwave meals were always in my freezer but I’l trying to make more things fresh with ingredients I pick up from the store myself. This is a dish that I used to buy a lot of but now I can make myself. I use the new Hungry Girl FoldIt Flatout bread to keep it low calorie and my portions controlled. DSC03884

Here is what you will need for the Chicken Quesadilla Flatbread Melt. There are a few different flavors but for this one I used Rosemary & Olive Oil. You can prepare your ingredients to ways. You can fire roast your peppers before you dice them or choose to sauté them when you prepare. I decided to dice them all before hand because I knew I wouldn’t use all of them at once.  DSC03890

Dice your onion, red pepper and poblano pepper. Use left over chicken or the Tyson refrigerated /frozen chicken. DSC03893

I placed all my ingredients into containers to keep them fresh so that I could make a few later on. These were a huge hit with my husband so they won’t go to waste. DSC03896

Flip your flatbread over. One side has the circles on it, this is meant to be the outside because it is softer. The other side looks more like lines from where it was baked. Brush the top with olive oil and sprinkle any seasonings you’d like. I used Italian seasoning but it is a “mexican” inspired meal. This just gives an awesome boost of flavor once it’s baked in.DSC03932

Sauté your onions, red peppers and poblano peppers together for a few minutes until the corners start to brown.DSC03938

Place your sautéed goodness on one side of the Fold It bread.DSC03933

Place your chicken (or steak, I bet that would be just as good) onto to the other side of the flatbread. DSC03935

Cover and smother with cheese. Too much cheese never hurt anybody. I’m like Paula Dean is to butter. So bring on the cheese! DSC03936

Place on the baking sheet and pop it into your toaster oven for 10 minutes (on toast).DSC03913

After the cheese is good and melted fold the bread in half. DSC03916
Squish it all together so that the cheese melts all together. Eat and repeat! Chicken Quesadilla Flatbread Melt

Chicken Quesadilla Flatbread Melt (Just like Stouffer’s)

Ingredients for a single melt:

Hungry Girl FoldIt Bread from Flatout

1 tbsp Poblano Pepper

1 tbsp Onion

1 tbsp Red Pepper

5 drops of Olive Oil

Seasoning (I used Italian)

1/2 cup Mexican Blend Cheese – Monterrey Jack & Cheddar (I like cheese)

Dice onions, peppers and chicken.

Sauté 1tbsp of each (peppers and onions) for 3-4 minutes or until starting to brown on the edges.

 

Place a few drops of olive oil on the top of the flatbread and brush until covered. Sprinkle with your seasoning and turn over.

Place peppers and onion mix on one half of the fold it bread. Place the diced chicken on the opposite side.

Cover both sides with cheese.

Toast or bake in a toaster oven for 10 minutes (or cheese is thoroughly melted).

Fold the bread in half and squish together. Serve!
