So let’s get started making some Avocado Ice Pops.

The first thing you need is the juice of some yummy fruit. If you don’t have a juicer, don’t sweat it. You can get a simple apple juice, and these will still be tasty.

I use the juicer to sneak in spinach without my daughter noticing. Juice together the spinach, apple, mango, and pineapple.

In your food processor blend your avocados and bananas. After it’s nice and smooth start adding in your juice. Then you’ll want to juice a lemon and blend the lemon into the mix. The lemon acts as a preservative so that the avocado doesn’t turn brown.

Fresh Lemon Juice FruitBlendAfter you have your mixture well blended, you’ll poor them into your favorite popsicle form. I used shot glasses to make ours. The glass releases smoothly after a quick run under warm water.

We froze ours overnight, but if you want to stalk the freezer, I won’t tell anybody.
Avocado Popsicles

If they are too strong, you can leave the spinach out. These are my version of a green goddess ice pops. Lots of great ingredients. Popsicle

Avocado Ice Pops

What you’ll need

Juiced items

1 cup spinach leaves (optional)

1 apple

1/2 cup of pineapple

1/2 Mango ( about 5 slices)

1 lemon

None juiced

1 banana

2 avocados

Juice the spinach(optional), apple, pineapple and mango with your juicer.

Blend Avocados and the Banana in a food processor.

Add juiced fruit and blend.

Juice lemon and strain the seeds and pulp. Combine the juice in the food processor.

After your mix is well blended, pour it into your ice pop molds. We used glass shot glasses.

Allow the popsicles to freeze completely, either overnight or a few hours.

To remove from the molds run hot water on the outside for a moment and then give it a little tug. It should come right out.

  4. We love chilled Avocado Soup! The one we make is from my Mary Hart cookbook and is so easy! Its just 3 avocados, 1 1/2 c chicken broth, 1 1/2 cup light cream, 1 1/2 teaspoon salt, 1/4 teaspoon onion salt, 1/8 teaspoon white pepper, and 2 teaspoons lemon juice! Puree avocados with chicken broth and then mix in cream and seasonings! You should chill for at least two hours….we sometimes make the night before for our family get togethers! Add the lemon juice just before serving! It tastes so good during the summer!!!!

  5. I love avocados any way you can make them, but recently had Baked Avocado Fries with Chipolte Dip. Love to be adventurous with my cooking! Gonna make these popsicles for Cino de Mayo.

  6. My favorite way to use avocados is in a simple, but yummy, salad. With lettuce, I mix a cup corn, 1 diced tomato, 1 diced avocado. I usually use a simple lime dressing with it.

  11. I love a Turkey, Avocado, and Cranberry sauce sandwich. You don’t need any mayo or anything else. the avocado and cranberry mixed together is like a taste explosion.

    avocado and tomato (sometimes with cucumber and hommus) sandwiches. yummm

    avocado – chocolate pie. (cocoa, avocado, coconut cream, honey or stevia. put in blender and pour into a graham crust shell. refridgerate) healthy and very taasty !!

  15. I love Avocado’s on a Turkey Sandwich, simple and yummy. Or for a recipe, I mash up the Avocados, add some garlic, cayenne pepper, onion powder and a tad bit of spicy salsa to it… pretty simple and yummy guacamole.

    4-5 avocados
    1 container (pint) cherry tomatoes
    1/2 red onion
    1 15oz can hearts of palm
    Put in a bowl. Add mayo and lemon juice and a bit of black pepper.
    Great salad.

  22. My friend makes the most awesome guac in the world. I recently used a left over avocado in some scrambled eggs and it was delish.

  23. My favorite is to cut the avocado in half…and remove the pit. Brush with olive oil and put them open face down on a grill. Grill until brown & bubbled, and then fill the “pit hole” with goat cheese. Let the goat cheese get all melty and just dig in!

  32. I am absolutely going to make these for my kids. I also like the idea of using a glass to form them. I’ve seen a similar idea using a paper cup, but using a glass you already have on hand is cheaper and easier. I like that idea a lot!
