What you will need
- 2 Cup white chocolate chips melted
- 8 jumbo round marshmallows
- 2 Cup finely shredded coconut
- 8 Fudge striped cookies
- 8 whole cashews
- 1/4 Cup chocolate chips melted
- 1 bamboo stick
- 1 disposable piping bag
- 1 cookie sheet fitted with parchment paper
Instructions
- Pour the shredded coconut into a medium bowl
- Using a medium microwave-safe bowl, melt the white chocolate chips in 30-45 second increments
- Stick the bamboo skewer into the marshmallow and dip it into the coconut
- Place the marshmallow onto a cookie sheet
- Repeat steps with remaining marshmallows
- Once the chocolate has hardened, take a sharp knife and poke a hole in the middle of the front of the marshmallows
- Push in the whole cashew into the hole
- Place the 1/4 C chocolate chips into a microwave safe bowl and melt on 30-second increments
- Scoop into the piping bag and cut the tip off
- Pipe dollops of chocolate onto the spots where eyes would go
- Allow chocolate to harden
- Pipe chocolate around the bottom of the marshmallow and place on top of the cookie
