My Husband and I are big soup fans. Unfortunately we don't always agree on the types of soup we enjoy. I enjoy cream based hearty soups while he enjoys stews more. So we when Bertolli asked up to try their new soups I was more than willing because you can't beat a tasty soup on a chilly evening.
We choose Tortellini with Chicken and Spinach in a Tomato base. When you pour it into the pan it was in smaller chunks of the soup, vegetables, chicken and cheese filled tortellini. All you have to do to prepare the soup is add 1 cup of water and turn the stove on. The simplicity was a breath of fresh air.
I love meals that I can create on the fly and still feel as though I am sitting at a restaurant. When we can sit down at the table and be transported to our own little date night. That is until you hear your kids sneaking out of their rooms upstairs. Or the baby screams out.
We paired our soup with a French Baguette because you can't have soup without a tasty bread to dip into it and scrape the bowl clean. The soup was more than I expected. It really was like I had ordered it from a restaurant and brought it home. For someone who's a soup snob that's saying a lot.
Before I started our dinner I decided to make a yummy but healthy dessert that we could enjoy afterwards. I took some Strawberries and Raspberries and dipped them into Vanilla yogurt and then placed them onto a plate. After they were nice and covered I placed them into the freezer to harden. They were the perfect way to end the evening. Not a heavy dessert, which is good because I filled up on soup. It's going to make a great midnight snack tonight too.
