Layered Ice Cream SandwichThis was a fun dessert we made together for Daddy’s birthday. We combined all our favorites to make one awesome Layered Ice Cream Cake.

This is an easy one for the kids to help out with and make their own. Super easy!

Grab a loaf pan. Mine happened to be a fancy one.

Loaf Pan

Line the pan with Parchment paper or saran wrap so you can get your Ice Cream Cake out once it’s frozen. Line Loaf Pan

Chop up some chocolate chips. (I used a nut chopper and when I was done I noticed that the chocolate was in the shape of a heart!)Chopped Chocolate Heart

Place the Chocolate chips at the bottom of the lined pan. You an building from the top down because this will all flip over when it’s done. Chocolate Chip Layer - Ice Cream Cake

We used Chocolate Cool Whip Frosting as our next later. It’s a light fluffy layer that doesn’t harden like the rest of it. Cool Whip Frosting - Ice Cream Cake

Spread it out over the chocolate chips and make sure you are pressing it in good so when it’s finished the chocolate won’t come rolling off. Cool Whip Frosting - Ice Cream Cake

The next layer we choose was an Ice Cream sandwich layer. The sandwiches had mini chocolate chips in the vanilla ice cream as well. Ice Cream Sandwich - Ice Cream Cake

Make one layer of the sandwiches. Cut them to make sure they fit.

Pour in your layer of Ice Cream or Frozen Yogurt. Make sure that it’s soft but not liquid.

If you have a yummy fruit you’d like to put in you can place it in whichever layer you like. We placed ours on the bottom so it would be a surprise that you couldn’t see until you cut into it. Raspberries - Ice Cream Cake

Place your loaf pan into the freezer and freeze until your ice cream layer is hard again or overnight. Pull your ice cream cake out onto and turn it right side up on a plate.

Pull your Parchment paper or saran wrap off slowly to reveal your layered ice cream cake! Ice Cream Cake

Ingredients

Chocolate Chips

Cool Whip Frosting

Ice Cream Sandwiches – 3 depending on the size of your loaf pan you may need more

Frozen Yogurt or Ice Cream (Softened NOT liquid)

Raspberries

  1. Line Loaf Pan with Parchment paper or saran wrap.
  2. Chop chocolate chips into crumbles. Place into the bottom of the lined pan.
  3. Spread Cool Whip frosting on top of chocolate chip crumbles.
  4. Place Ice Cream Sandwiches on top of the frosting layer. Cut to make them fit to pan size.
  5. Cover the Ice Cream sandwich layer with Ice Cream or Frozen Yogurt.
  6. Place Raspberries into the bottom.
  7. Freeze over night.
