Ever Had A Brinner Party?

You know those nights that you just don’t know what to cook and  you are sick of the same old things that you make? I get that about once a month and that’s when I decide to make Breakfast for Dinner time. Sometimes you just want a simple but filling meal and breakfast food as always been like that for me.

Brinner – The act of eating Breakfast during Dinner time.

We had our own little Brinner party together with some family and friends and I made my delicious roasted red pepper scrambled egg’s for everyone. It’s my favorite way to eat eggs, I normally make them in a breakfast panini.

You start by taking the seeds out of a red bell pepper and placing it on a pan in the oven to roast. This will release a great flavor for your scrambled eggs. Place your butter in the pan and then place it in the oven to melt while you prepare your eggs. Then, I crack an entire carton of Eggland’s Best eggs and whisked them in a bowl with some milk. The milk makes them fluffy, just like the little EB egg helping me out. Pour your egg mix into the pan. 20140711-161800-58680697.jpg

After the red pepper is roasted I diced it up and added it to my pan of eggs and threw it into the oven.

My bloggy friend showed me how to make scrambled eggs in the oven and now whenever I need to make a lot of them, this is how I do it. It’s crazy simple. Let the eggs cook for about 10 minutes and then scrap the pan each time you check on them. Perfect batch of eggs every time. 

We also have some chicken apple sausage and biscuits to go with our eggs. There were seconds all around! What I love about Eggland’s Best eggs is that they stay fresher longer than other eggs. They also have twice the omega-3s, four times the vitamin D, ten times the vitamin E and 25% less saturated fat.
