This year something exciting happened to me, I graduated from college and completed my undergraduate degree. I also took on a graduate assistant position to help pay for my master’s as well. Going back to work has been an adjustment for me. I don’t work full days, but I do work through lunch and I’m the worst at remembering to make myself lunch sometimes. I’ve been bringing some feel-good foods with me so that I’m not working on an empty stomach.

I recently started eating gluten-free because of some dietary concerns that were upsetting my stomach. The Healthy Choice Grain Free Power Bowls are a tasty way to get a filling lunch in. I tried the Spicy Beef Teriyaki that has braised all-natural beef with vegetables, served on top of riced cauliflower in a sweet and spicy teriyaki sauce. I’m a huge fan of riced cauliflower because you can mix it into lots of dishes and it helps fill you up. The Power Bowls provide 18 – 20 grams of protein and 5 -7 grams of fiber per bowl.

My favorite item is the Udi’s BBQ Flavored Chicken Pizza that has a crust made from sweet potatoes and is completely grain and gluten-free.  This pizza is so flavorful with a blend of mozzarella and smoked gouda cheese, sweet BBQ sauce, and white meat chicken. I’m not going to lie, I devoured this whole pizza.

Flavor savorers will love the Evol Fire Grilled Steak Bowls (also gluten-free) because of the insanely tasty cilantro lime pesto sauce. Made with fire-grilled steak raised without antibiotics is combined with black beans, white rice, red and green bell peppers, roasted corn and cheddar cheese. With 18g of protein and 7g of fiber in each bowl, this dish is so yummy and great option during my busy work and school day.

Lastly, are the Gardein Nashville Hot Chick’n Tenders that I made for the kids to eat as an after school snack. My oldest LOVES spicy foods and I love the meatless option that gives them plant-based protein made from pea and wheat.  It was like eating an appetizer while we cooked dinner for them. Always certified vegan, non-GMO, dairy-free, and kosher.

When I don’t have a lot of time and I need to reach for a quick meal, I reach for these great options because the protein and gluten-free options fit into my eating lifestyle. They make having a feel-good lunch easy for me.
