Sometimes eating healthy can get boring. I know I’m not the only one that feels like that, so I try to switch things up every now and again by making my healthy snacks into something you’d think was terrible for you. This Fruity Chocolate Froyo only has three ingredients and I top it with strawberries and chocolate coconut flakes. It is so good.
The inspiration for this froyo came from a recipe I found in the Stonyfield recipe box and a recipe I spotted on the Bare Snacks site. I wanted something chocolatey but also fruity so I started combining ingredients, hoping that it would turn out the way I wanted it to. Glad it did. It’s my way of keeping a new years resolution to not eat junk food.
Our family goes through bananas like crazy. I have to buy two sets at a time, a green set and a yellow set. Sometimes we end up with one or two that get too banged up to eat so I freeze them for my smoothies. They aren’t the prettiest frozen fruit but they make the best frozen yogurt. I used my Blendtec on the ice cream feature to blend the frozen bananas, yogurt and cocoa powder together. I put it in the freezer to harden up a little more and then I layered the froyo with some fresh strawberries and my new favorite snack, chocolate bliss coconut chips.
I’m a huge Bare Snacks fan, they make apple chips, coconut chips and mango chunks that are to die for. The coconut chips give the froyo a nice crunch too. You can make this froyo with lots of the Stonyfield products, like the chocolate greek yogurt or you can just get the chocolate frozen yogurt and scoop it into a bowl. I love that both of these brands are Non GMO also.
I wish I could tell you what my kids thought about it, but I ate it all when they went to bed. Don’t judge me, you know you’ve hidden food from your kids before so you wouldn’t have to share.
What you will need
- 2 frozen bananas
- 3/4 cups of Stonyfield Plain Yogurt
- 1/3 cup of cocoa powder
- Chocolate Bliss Coconut Chips
- Fresh strawberries
- Blend the frozen bananas until smooth.
- Add yogurt and blend together.
- Add cocoa powder until incorporated.
- Place in individual glasses or all together in freezer for 30-60 minutes.
- Once the desired texture is achieved layer the froyo with the fresh chopped strawberries and coconut chips
