Holly Jolly Mickey Mouse Cupcakes

Ingredients

Chocolate Cupcake

  • 1 box of chocolate cake mix
  • 1 ¼ C of whole milk
  • ½ C unsalted sweet cream butter softened
  • 3 large eggs

Vanilla frosting

  • 1 C unsalted sweet cream butter softened
  • 3 C powdered sugar
  • 2 tsp pure vanilla extract
  • 3-5 tbsp heavy whipping cream
  • 1 package of Wilton holly sprinkles
  • 1 6 Ounces container of crushed peppermint candy

Instructions

Fondant Directions

  • Sprinkle some cornstarch onto the cutting board
  • Remove the red fondant from the package and knead onto the cutting board to make the fondant soft and workable
  • Sprinkle some more cornstarch onto the cutting board and roll the fondant into ¼ inch thick
  • Using the round fondant cutter, cut out 36 round circles. Place them onto the cookie sheet.
  • Work the fondant back into a bowl and roll the fondant into ¼ inch thick
  • Using the mini mickey cutter, cut out 18-20 mickey heads. Place onto the cookie sheet
  • Remove the red fondant from the board and sprinkle some more cornstarch
  • Work the green fondant into a ball and roll into ¼ inch thick
  • Using the holly leaf cutter, cut out 36-40 holly leafs
  • Cut off the 3 round part of the holly leaf
  • Once all fondant pieces have been cut, place onto the cookie sheet and place onto the counter to air-dry overnight

Cupcake Directions

  • Preheat the oven to 350 degrees and line a cupcake pan with liners
  • Using a large bowl, beat together the cake mix, milk, butter, and eggs until combined and smooth
  • Fill the cupcake liners ¾ way full
  • Bake in the oven for 21 minutes
  • Allow cooling completely

Frosting directions

  • Using a standing mixer, beat together the butter, powdered sugar, vanilla, and heavy whipping cream until combined, smooth and stiff.
  • Scoop the frosting into the piping bag
  • Using the frosting, pipe two rings of frosting around the edge
  • In a medium bowl, combine the crushed peppermint candy and the Wilton holly sprinkles
  • Using the piping bag, pipe two rings of frosting around the edge
  • Dip the frosting into the sprinkle mixture
  • Using the piping bag, pipe a dollop of frosting into the middle
  • Carefully pick up the red fondant mickey mouse head
  • Place into the middle of the frosting
  • Place two holly leaves behind the head
  • Place two circles behind the leaves to create the ears
