Making ice pops during the summer is a must, but I’ve been making them for my kids all summer. I think it’s time to make an adult only snack for myself. These ice mocha ice pops make a great afternoon pick me up. It’s a summer treat that all the adults will love. With an added treat of chocolate and hazelnut to give these a crunch, you may have a new favorite popsicle flavor.
Despite it being summertime, I still get the afternoon lag. I reach for coffee to give me a pick me up but drinking hot coffee during the hottest part of the day is not refreshing. That’s why I love having Iced Coffee ready to drink in the refrigerator. International Delight makes that even easier with their Iced Coffee flavors like Mocha, Caramel Macchiato, and Vanilla. You just pour them over ice and drink. That factor makes them ideal for using in recipes as well. With our new popsicle maker, I can make them in under ten minutes for a speedy treat.
I then melted some milk chocolate and coconut oil together to make a magic shell. I took a spoon and drizzled the chocolate on the end of the ice pop. Then I dipped the ice pop into crushed hazelnut before the chocolate hardened. You could do this with any kind of nuts, but I love the taste of hazelnut and peanuts on frozen treats. Leave a few in the freezer so you have a yummy snack to cool down during summer.

Ingredients
- Iced Mocha Coffee from International Delight
- Magic shell - chocolate and coconut oil
- Crushed hazelnuts
Instructions
- Pour iced coffee into your favorite ice pop mold and let freeze completely.
- Drizzle chocolate magic shell onto the end of your ice pop and drip into crushed hazelnuts before it hardens.
- Enjoy!
