This month has been a serious whirlwind. It started with lots of school and work and was followed up with lots of traveling for conferences and a side vacation! To say that I’m tired would be an understatement, but I started the Protein Challenge at the beginning of the month and I feel like it has really helped me in terms of energy to keep going.
If I wasn’t sitting at my desk cramming in some studying I was getting in over twenty thousand steps walking around Walt Disney World. Getting protein during each meal helps keep me going so I don’t get that midday lag. When you’re getting those added steps in too you burn more calories so having a sturdy meal makes me less hangry. I’ve been participating in The Beef Checkoff’s Protein Challenge, which is a step-by-step 30-day plan to get that balance amount. During the challenge, you keep track of your food, hunger, and moods to see how simple changes can make a difference in your overall health and wellness.
While I was staying inside the city for a Discover Atlanta event I discovered an amazing little place in Ponce City Market that makes fresh beef jerky and you can get a bag and season it to your liking. I grabbed a bag to eat as a snack during our visit and I regret not getting a bigger bag because it was so yummy. I think it’s time to break out my dehydrator and make some more. It’s always my road trip snack too. Protein throughout the day helps you avoid that hungry feeling, giving you more control over the foods you choose.
One of my favorite recipes from the Protein Challenge website was the tenderloin, cranberry, and pear salad with honey mustard vinaigrette. I’m not usually a fan of honey mustard but this dressing was so yummy with the tenderloin.
After my stay in Atlanta, I packed up and headed to Walt Disney World for a conference and vacation with some of my girlfriends without my kids! We had such a blast and were on the go so much that I was thankful to have eaten something filling at eat meal, because we were out until super late for the Halloween party.
After a handful of days in the park (full days), we were finally wiped! But we have SOOOOO many great pictures of us in our costumes and together to remember our fun adventures.
