Greek Grilled Corn and Farro Salad

  • 2-3 Ears of Sweet Corn
  • 4 tbsp butter softened
  • 1 jar of marinated artichoke hearts chopped
  • 1 cup farro
  • to taste - Greek Seasoning basil, marjoram, thyme, oregano, onion and garlic powder
  • olive oil
  • feta cheese


  • Preheat grill
  • Husk corn and set aside
  • Combine butter, greek seasoning and 4 artichoke hearts
  • Place corn in aluminium foil and spread greek butter over the corn
  • Grill 15-20 minutes turning the corn every couple of minutes to prevent it from burning
  • Cut corn from cob and mix into prepared farro, allow to cool
  • Mix in olive oil, greek seasoning and feta cheese to taste
