Ingredients
8eggs
1teaspoonvanilla extract
1teaspoonground cinnamon
1tablespoonwhite sugar
3ripe bananaspeeled and mashed
½cupcreamy or crunchy peanut butter
¼cupmilk
½loaf french toastcubed
For garnish:
2bananassliced
½cupcreamy peanut buttermelted
Instructions
Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray.
Place the bread in a large bowl.
Beat the eggs until frothy. Stir in the vanilla, cinnamon, sugar, and peanut butter until well blended. Add the milk, stirring until completely incorporated.
Mash the bananas with a fork until smooth and then add to egg mixture.
Pour the mixture over the bread and toss to coat well. Transfer the mixture to the prepared casserole dish.
Bake the french toast casserole for 40 to 50 minutes or until golden brown.
Top the casserole with sliced bananas and melted peanut butter.
Serve with maple syrup or powdered sugar, if desired.
